Instant Pot Lazy Lasagna

Ingredients

  • 2 tablespoons olive oil
  • 1 14 ounce package Italian sausage
  • 1 tablespoon minced garlic
  • 1/2 onion, chopped
  • 1 25 ounce jar pasta sauce
  • 2 tablespoons Italian seasoning
  • 1 teaspoon garlic pepper (you can also use regular pepper, if needed)
  • 3 tablespoons dried basil
  • 12 ounce skinny lasagna, broken into half pieces or thirds (you can also use regular lasagna you break into smaller pieces). 
  • 2 cups beef broth
  • 1 cup water
  • Pinch of red pepper
  • Salt to taste
  • 1 cup Parmesan cheese
  • 1/2 cup Mozzarella cheese

Instructions

  • Turn on your Instant Pot and select the 'Saute' function on high.  
  • Add olive oil, onion and sausage and saute until browned.  
  • Add garlic and saute for an additional 1-2 minutes.  
  • Select the 'Cancel' button to turn off the Instant Pot and reset the cooking function.  
  • Add pasta sauce, garlic pepper, basil, red pepper flakes, Italian seasoning, salt, beef broth, water and pasta shells.  NOTE: When you add the pasta shells, be sure to add them in a criss-cross motion.  Doing so will help the pasta shells from sticking together. Also, as you are adding the shells, try to press as much of the shells under the water as possible.  
  • Select the 'Pressure Cook' function and cook on high for 4 minutes.  
  • Once the timer beeps, quick release all pressure then carefully remove the lid.  
  • Stir contents to break up the pasta and combine all ingredients well.
  • Add Parmesan cheese and stir again until contents are well combined.  
  • Serve, top with mozzarella cheese and enjoy!!

TIPS FOR MAKING INSTANT POT LAZY LASAGNA:
  1. Most Lazy Lasagna recipes are made with ricotta cheese, but it's not a favorite in our house so I omitted it for this recipe.  If you would like to add, feel free to do so - 1 cup.  You will to add after the pressure cooking process when you add the Parmesan cheese.  
  2. This recipe is loaded with flavor!  I used dried basil because that's what I had in the pantry, but you can also use fresh basil, as well.  Also be sure to add the fresh basil when you add the Parmesan cheese.  
  3. As mentioned above, if you like veggies, this Lazy Lasagna is a great way to get the family to add a few greens with dinner.  I recommend spinach, kale, zucchini, squash - or all of them :)
