Place chicken breasts and jerk chicken marinade into a refrigerator safe container and allow chicken to marinade for at least 30 minutes. I prefer to marinade overnight for added flavor.
Once the chicken is fully marinaded, place chicken breast and all marinade juice and from your container into your Instant Pot along with chicken broth and pineapple chunks with juice.
Turn your Instant Pot on and select the 'Pressure Cook' function on high. Cook for 5 minutes.
Once the timer beeps, all the pressure to naturally release for 15 minutes then quick release all remaining pressure.
Remove chicken from the Instant Pot and place in a large bowl.
With two forks, pull the chicken apart until shredded. You should find the chicken in very tender and juicy allowing it to pull apart quickly and easily.
Before placing chicken back into the Instant Pot, drain 3/4 of the juice (leaving 1/4 remaining along with all pineapple chunks.
Add now shredded chicken back into the Instant Pot along with jerk chicken sauce. Stir all ingredients until well combined.
Serve over a bed or rice, on a slider bun, on tacos and so much more! Add your favorite toppings and enjoy!
