Preheat your oven to 350 degrees. Grease a 6-cup muffin tin with non-stick cooking spray.
In a medium bowl, mix together rolled oats, honey, chia seeds, ground cinnamon, vanilla, coconut oil and mayple syrup until well combined. NOTE: if needed, you can melt the honey for 10 seconds to make it slightly easier to mix with the oats.
Add equal amounts of the granola mixture to each of the 6 muffin tins. Press the mixutre down into each cup so they form a small cup. TIP: wet your fingers just a bit with water to form the cups. This will help the mixture from sticking to your hands.
Place the muffin tin in the oven and bake for 12-15 minutes.
Carefully remove from the oven and reshape the granola mixture into a bowl form, if needed.
Allow the granola cups to cool for 20 minutes before removing.
Fill each cup with regular or greek yogurt, ice cream, berries, peanut butter or more! Serve and enjoy!
Store in an airtight container for up to two weeks.
