BROCCOLI, CAULIFLOWER & CHICKEN CASSEROLE | LOW CARB RECIPE

This broccoli chicken casserole recipe is perfect for a weeknight meal. It is packed with protein and veggies and is super simple to make. Pure comfort food!

Ingredients

  • 1 cup fresh broccoli florets
  • 1 cup cauliflower florets
  • 3 skinless boneless chicken breasts, cut into cubes 
  • 3/4 tablespoon garlic pepper (you can also just use pepper to taste, if needed) 
  • 1 tablespoon Italian seasoning
  • 1 cup shredded Sharp Cheddar cheese 
  • 4 ounces sour cream
  • 2 10.5 ounce can cream of chicken soup, low sodium
  • 1/4 cup Panko bread crumbs (optional)

Instructions

  • First, preheat the oven to 375 degrees Fahrenheit.
  • In a 9×13 baking dish, lightly coat with non-stick cooking spray. Layer chicken, broccoli, and cauliflower evenly in the casserole dish.
  • Next, in a large bowl, mix together the cream of chicken soup, sour cream, garlic pepper, Italian seasoning, and cheese. Pour the mixture over the layer of chicken, broccoli, and cauliflower. Add a pinch of salt and place in the oven.
  • Bake for 30-40 minutes or until the casserole is golden brown and bubbly.
  • As an optional topping, add panko bread crumbs or crumbled Ritz crackers and bake for an additional 5 minutes.
  • Serve warm and enjoy!
