With the family together at home these last several months, breakfast has become one of our favorite meals of the day. It’s the perfect way for us to kick off the day together around the table or cuddled up on the couch with our favorite cartoons.

Today, we added a little twist to this protein waffle recipe by adding two scoops of our favorite Hudsonville Creamery Blend Vanilla ice cream. CAN PROTEIN WAFFLES BE MADE AHEAD OF TIME?
They most certainly can! In fact, it’s one of our favorite recipes to meal prep over the weekend. I typically double or triple the recipe and place in the freezer for the weeks ahead. See below for how to store, freeze and reheat.
HOW TO STORE & FREEZE PROTEIN WAFFLES
Before storing your protein waffles, allow them to cool completely. Once they have cooled, place them in a freezer or refrigerator safe container releasing as much air as possible. They will remain fresh in the refrigerator for 4-5 days and in the freezer for up to two months.
HOW TO REHEAT WAFFLES
There are a number of different ways to reheat protein waffles. Feel free to warm them in the microwave wrapped in a slightly moist paper towel, reheat in a toaster oven or toaster or even on the stove top with a little butter in the pan.
WHAT PROTEIN DO YOU USE?
We use a few different protein powders at our house, but here are just a few of our favorites. We recommend choosing a healthy protein powder that has very little processed and/or artificial ingredients.

INGREDIENTS FOR PROTEIN WAFFLES:
- 1 cup oats (you can use steel cut oats or rolled oats)
- 2 eggs
- 1 ripe banana
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1 tablespoon chia seeds (optional)
- 1 teaspoon baking powder
- 2 tablespoons almond flour ( We love Bob’s Red Mill products. You can also use coconut flour or oat flour)
- 2 tablespoons vanilla protein powder (you can also you chocolate protein powder, if preferred)
- 2 scoops Hudsonville Creamery Blend Vanilla ice cream
- 1/2 cup fresh berries, sliced bananas and maple syrup for topping
IF YOU PREFER TO MAKE WITH TRADITIONAL WAFFLE MIX
- 1 cup Buttermilk Pancake Mix
- 1 tablespoon oil (we use coconut oil or avocado oil, when possible)
- 1 egg
- 1 cup oats
- 1 ripe banana
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 2 tablespoons vanilla protein powder (you can also you chocolate protein powder, if preferred)
- 3/4 cup unsweetened almond milk
- 2 scoops Hudsonville Creamery Blend Vanilla ice cream
- 1/2 cup fresh berries, sliced bananas and maple syrup for topping
HOW TO MAKE FLUFFY PROTEIN WAFFLES:
- Preheat your waffle maker or waffle iron to medium heat.
- Next, in a blender or food processor, add all ingredients and blend until well combined. NOTE: you can also mix all of the ingredients together in a large mixing bowl, if preferred. The blender or food processor will just add additional smoothness to the mixture.
- Once your waffle maker has reached the desired temperature, spray an even coat of nonstick spray to both sides.
- Using a small ladle, scoop batter into the middle of your waffle maker being sure no to overfill. Close the waffle maker and flip.
- Allow waffles to cook for 1-2 minutes or until they have reached your desired texture and color. Once fully cooked, carefully remove the waffles from the waffle maker with nonstick tongs.
- Serve warm topped with maple syrup, Hudsonville Ice Cream, fruit, peanut butter, whipped cream and more! Eat with a side of scrambled eggs, egg whites, bacon, etc.
