Healthy Muffin Tin Granola Cups

Healthy granola cups are the perfect way to tackle your busy mornings!  With just a few simple ingredients, homemade granola cups can be made in advance and are the perfect grab-and-go for everyone in the family!

For the last several weeks, I have been looking forward to learning how to make these healthy granola cups. They have become the perfect snack our family grabs on the go for all our busy mornings.  And, are the perfect easy recipe that can be meal prepped on the weekend.  

If you have followed the blog for any amount of time, you know we really love to share easy recipes with you all that are versatile. 

Wether you need a simple, portable snack recipe for the family, want a health replacement for ice cream cones, granola cups for yogurt or a fun way to serve berries and other fruits – these health granola cups are the answer. 

Whipping up these healthy granola cups will only take you a few quick minutes.  And, you likely have all of the ingredients you need right in your cabinet.  Here’s what you’ll need:

WAYS TO SERVE THESE ADORABLE MUFFIN TIN GRANOLA CUPS:

As we mentioned, there are so many great ways to serve these muffin tin granola cups.  Here are a few of our favorite ways to top and fill.  

  • Yogurt – who can resist these breakfast granola cups filled with your favorite greek yogurt topped with berries?  The boys in our house have been devouring them in the morning.  I keep them in an air tight container close to the door in our pantry and they go like hot cakes 🙂 
  • Ice Cream – this just happens to be my favorite way to eat muffin granola cups 🙂  Of course, we ALWAYS serve them with Hudsonville Ice Cream (we love Vanilla topped with chocolate drizzle or any of Hudsonville’s dairy free ice cream options)!  Throwing a party for the kids?  These make for the perfect alternative for ice cream cones.  
  • Peanut Butter – granola cups with peanut butter with a dark chocolate topping?  Yes, please!  I’ll take two!  The ultimate snack recipe. 
  • Mixed Berries – muffin tin granola cups also make for a cute berry dessert option.  We filled half of this recipe with our favorite mixed berries and topped with a greek yogurt drizzle.  Yum!

HOW TO MAKE GRANOLA CUPS:

  1. Preheat your oven to 350 degrees.  Grease a 6-cup muffin tin with non-stick cooking spray.
  2. In a medium bowl, mix together rolled oats, honey, chia seeds, ground cinnamon, vanilla, coconut oil and mayple syrup until well combined.  NOTE: if needed, you can melt the honey for 10 seconds to make it slightly easier to mix with the oats.  
  3. Add equal amounts of the granola mixture to each of the 6 muffin tins. Press the mixutre down into each cup so they form a small cup.  TIP: wet your fingers just a bit with water to form the cups.  This will help the mixture from sticking to your hands.
  4. Place the muffin tin in the oven and bake for 12-15 minutes.  
  5. Carefully remove from the oven and reshape the granola mixture into a bowl form, if needed.  
  6. Allow the granola cups to cool for 20 minutes before removing. 
  7. Fill each cup with regular or greek yogurt, ice cream, berries, peanut butter or more!  Serve and enjoy! 
  8. Store in an airtight container for up to two weeks.

Healthy Muffin Tin Granola Cups

SERVES/MAKES: 6 PEOPLE
Prep Time 5 minutes
Cook Time 20 minutes

Ingredients:

  • 1/4 cup honey
  • 1 tablespoon ground cinnamon (feel free to drecrease slightly, if preferred)
  • 1 1/2 cups rolled oats 
  • 1 tablespoon maple syrup
  • 2 tablespoons chia seeds (optional.  feel free to use flax seeds or hemp seeds, too)
  • 2 tablespoons vegetable or coconut oil
  • 1 teaspoon vanilla

Instructions:

  • Preheat your oven to 350 degrees.  Grease a 6-cup muffin tin with non-stick cooking spray.
