Donut Ice Cream Sandwiches are the perfect frozen treat all year round!  Made with fluffy cake mix and creamy Hudsonville Ice Cream, this dessert recipe will have your family begging for seconds!

 

It’s no secret we are big fans of breakfast in our house.  We love a plate of fluffy panckaes or protein waffles!  But, my boys’ real vice is a bag of powdered glazed donuts.  They are always stashing them away in our pantry for no one else to find. 

So, when it came time to team up with our friends at Hudsonville Ice Cream to celebrate Eat Ice Cream for Breakfast Day (February 6th – mark your calendars!), I knew donut ice cream sandwiches were the perfect breakfast surprise.  And on man, were they delicious!  

If you are not familiar with Hudsonville Ice Cream, they are a Midwest brand in Michigan.  Their ice cream is made with the highest quality milk and cream sourced from their neighboring dairy farmers, many within 10 miles of their headquarters in Holland, Michigan.  There is a reason we buy only Hudsonville Ice Cream in our house – it’s by far the creamiest, most flavorful ice cream we have ever had.

WHAT YOU’LL NEED TO MAKE DONUT ICE CREAM SANDWICHES

FOR THE DONUTS:

We chose to make these donut ice cream sandwiches using our favorite cake mix.  We love the light, fluffy texture paired with the creamy ice cream.  What is great is this recipe works well with any of our favorite cake mixtures.  Our favorites include:

To make life easier, you can also use store-bought donuts from your local grocery store or bakery.  We can resist a glazed donut?  Not us! 

Also, we used a nonstick donut pan to create this recipe.  However, we have also used a mini donut maker in the past.  What we love about both of these options is they create donuts in more a bite size portion as opposed to a larger donut.  

 

FOR THE ICE CREAM FILLING: 

We chose to use both Hudsonville Creamery Blend Vanilla and Hudsonville Mackinac Island Fudge for these ice cream sandwiches.

Donut ice cream sandwiches are so easy to make and can quickly be adjusted for every holiday.  Below are favorite donut and ice cream combinations for your upcoming festivities. 

 

VALENTINES DAY

For Valentines Day, we recommend making donut ice cream sandwiches with Hudsonville’s Strawberry Cheesecake ice cream or Traverse City Cherry Fudge (both with hints or red and pink) paried with your favorite brownie mixture or gluten free chocolate cake mixture.  Do not forget to add some heart sprinkles, too!

 

ST. PATRICK’S DAY 

A good St. Patrick’s Day celebration calls for all things green!  Opt for your favorite brownie mix with Hudsonville Mint Chocolate Chip ice cream and a mint chip or Lucky Charms cereal topping.  Add hot chocolate fudge, too?  Yes, please!

 

JULY 4TH

For your red, white and blue festivities try switching out the strawberry cake mix with red velvet sandwiched with Hudsonville Creamery Blend Vanilla ice cream and red, white and blue sprinkles.  

 

HALLOWEEN 

For Halloween, the spooky ice cream sandwich combinations are endless!  Our favorites include brownie mixture for the donuts paired with vanilla ice cream or Hudsonville’s Orange Pineapple ice cream.  Top with M&M’s, mini gummy worms, seasonal candies and more!

HOW TO MAKE DONUT ICE CREAM SANDWICHES: 

  1. Preheat oven to 350 degrees. 
  2. Spray donut pan or donut maker with nonstick cooking spray. 
  3. In a large bowl or mixer, add cake mix, water, oil and eggs and mix until well combined.  Carefully add batter to donut pan or maker filling about 2/3 of the way.  Be sure not to overfill.  
  4. Place in the oven and bake for 10-2 minutes or until a toothpick placed in the middle of donut comes out clean.  
  5. Once fully cooked, remove from the oven and allow to cool completely.  
  6. Once cooled completely, carefully cut each donut in half.  
  7. Place a generous scoop of ice cream onto the middle of one donut half and spread evenly to the edges with a spatula or back of a spoon.  Place the rremaining half of the donut on top of the ice cream forming a sandwich.  
  8. Place ice cream sandwiches on a baking sheet lined with parchment paper and freeze for 2-3 hours.  
  9. When ready to serve, roll half of the ice cream sandwich in your favorite topping and drizzle melted chocolate on top.  
  10. Serve and enjoy!
