Easy Instant Pot BBQ Chicken

Instant Pot BBQ Chicken is the best ways to ring in warm weather season!  This 2-ingredient recipe is delicious, tender, juicy and can be served a number of different ways all year long! 

 

With the Summer season upon us, you can likely find us cooking out and entertaining guests for months to come.  And, one of our favorite Instant Pot chicken recipes has to be BBQ pulled chicken.

We turn to this low carb, easy recipe made with your favorite barbeque sauce.  This Summer this pulled barbecue chicken recipe has become one of our families most requested Instant Pot recipes.  

What’s really great about Instant Pot BBQ Chicken is 1). there are a number of different ways to serve this super easy dish, and 2).  it’s so quick and delicious.  In just a few short minutes, you’ll have perfectly cooked, juicy, tender chicken everyone will love. 

As we mentioned above, this pressure cooker BBQ chicken is so versatile.  You can make BBQ pulled chicken, awesome pulled chicken sandwiches, lettuce wraps, chicken dip, make BBQ chicken pizza and tons more!  

Using boneless skinless chicken breasts you’ll have a meal on the table in less than a few minutes. This recipe can also be made with your favorite barbeque sauce or we’ve included our favorite homemade barbecue sauce recipe, too!  It’s a family favorite!  

We specifically only cook the boneless skinless chicken breast with just chicken stock and add the sauce later so that we can also take some of the cooked or pulled chicken and freeze it.  We then love to use that same shredded/pulled chicken for soups, buffalo chicken dips, chicken sandwiches and more.

WHY COOK BBQ CHICKEN IN THE INSTANT POT?

One of the most frequently asked questions we get is why cook BBQ chicken in the Instant Pot as opposed to the grill?  

Pressure cooker BBQ chicken leaves your chicken tender, juicy and cooked to perfection every time.  You can throw your ingredients into the pot, select the cook time and walk away until complete.  It’s a simple as that!  There’s no overcooking, regularly checking the grill, etc.  

 

WAYS TO SERVE BBQ CHICKEN

There are a ton of great ways to serve Instant Pot BBQ Chicken. Below are just a few of our favorites, but most importantly, we think shredding chicken is the easiest, most versatile way.  

Cooking the boneless chicken and then shredding is by far one of our favorite Instant Pot meal.  It allows us to cook larger amounts, freeze some and serve the rest. 

If your family is anything like ours, each person in our family likes a differend kind of barbeque sause.  Choose to shred the chicken or serve it as pulled chicken makes for several great dinner recipe options.  

But, here are just a few of my favorites.  

  1. BBQ Chicken Sliders – whether you choose a great barbeque sauce, a lemon seasoning or an awesome jerk sauce, Instant Pot pulled chicken on sliders is delicious and easy!  Top with cheese and your favorite topping such as cole slaw, pickles and more. 
  2. BBQ Chicken Pizza – We love shredding the chicken and then layering on top of homemade pizza dough for BBQ chicken pizzas.  Top with delicious cheese and pineapple chunks and you’re good to go!
  3. Whole Chicken Breasts –  Prefer to keep your chicken breats whole?  We love that, too!  Barbeque chicken served with your favorite pasta is a great choice, as well.  
  4. BBQ Chicken Lettuce Wraps – If you’re looking to make your dinner recipe more keto friendly, serve your BBQ chicken on lettuce wraps instead! 
  5. BBQ Chicken Quesadillas – One of our favorite ways to serve the shredded BBQ chicken is via a BBQ chicken quesadillas.  Grab some tortillas, your favorite cheese and spread some BBQ chicken evenly, cook and serve!

CAN I USE FROZEN CHICKEN? 

You certainly can.  If doing so, I might add about 5 more mintues to the cook time.  It’s also worth noting it will take the Instant Pot more time to come to pressure when using frozen chicken.  

 

WHY IS MY INSTANT POT CHICKEN RUBBERY? 

If your boneless chicken breasts come out with a rubbery texture it it likely you need to cook the chicken a bit longer.  Typically speaking, meat cooks best in the Instant Pot under longer cook times.  If you happen to use frozen chicken breasts as mentioned above, allow the chicken breasts to naturally release for 10 minutes or so for more tenderness.

PREFER TO USE HOMEMADE BBQ SAUCE?  HERE’S OUR FAMILIES FAVORITE RECIPE: 

  • 1/4 tablespoon allspice 
  • 1/4 tablespoon cinnamon 
  • 1/4 tablespoon mace 
  • 1/2 tablespoon curry powder 
  • 1/2 tablespoon chili powder 
  • 1/2 tablespoon paprika or smoked paprika
  • 1/3 cup white vinegar 
  • Tabasco to your liking 
  • 1 cup ketchup 
  • 1/3 cup dark molasses

HOW TO MAKE INSTANT POT BBQ CHICKEN: 

  1. Add chicken broth and chicken breasts to the Instant Pot and secure the lip. 
  2. Turn your Instant Pot on and select the ‘Pressure Cook’ function on high.  Cook for 8 minutes.  
  3. Once the timer beeps, allow the pressure to naturally pressure release for 10-15 minutes then quick release all remaining pressure.  
  4. Remove the cooked chicken from the Instant Pot and place in a large bowl.  
  5. With two forks, pull the boneless chicken apart until shredded.  You should find the chicken in very tender and juicy allowing it to pull apart quickly and easily. You can also use a hand mixer to break up the chicken, if needed. 
  6. Add now your favorite BBQ sauce, pineapple chunks to your now shredded chicken.  Stir all ingredients until well combined.   
  7. Serve on a slider bun, on tacos, pizza and so much more!  Add your favorite toppings such as cheese, cole slaw, pickles and enjoy!

DELICIOUS INSTANT POT BBQ CHICKEN

Summer barbecue season is here and this Instant Pot BBQ Chicken is the best ways to ring in the season!  It's delicious, tender, juicy and can be served a number of different ways all year long! 
SERVES/MAKES: 6 people
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients:

  • 4-6 boneless skinless chicken breasts
  • 1 18 ounce jar BBQ sauce (we love Sweet Baby Rays)
  • 1 1/2 cups chicken stock or broth (you can also use 1 1/2 cup of water, if needed)
  • 1 can pineapple chunks with juice (optional) 
  • Cole slaw topping (optional) 

HOMEMADE BBQ SAUCE RECIPE

  • 1/4 tablespoon allspice
