Instant Pot Jerk Chicken has to be one of the easiest recipes we have made so far.  But, let’s be clear.  Just because it’s easy doesn’t mean it’s not packed with tons of flavor and spice.  

What’s better than the ease of this recipe is the many, many ways you can serve the jerk chicken once it’s cooked.  On tacos, sliders, over a rice bowl or just served as breasts with an incredible side like Instant Pot Creamy Garlic Parmesan Brussel Sprouts – jerk chicken is so versatile.  

Plus, the chicken comes out of the Instant Pot incredible juicy and tender!  We hope you enjoy it as much as we do! 

The recipe below will feed 6-8 people depending on serving size, but once the chicken is cooked we typically store in a freezer safe container for later in the week.

WAYS TO SERVE INSTANT POT JERK CHICKEN: 

  • SLIDERS: Serve the jerk chicken on a toasted slider bun topped with cole slaw, pineapples and Gorgonzola cheese. 
  • TACOS: Whether you serve them on soft or hard shells, this jerk chicken would be absolutely delicious as tacos.  I would top with the same toppings as the sliders above.  Tacos would also be delicious topped with mango salsa!  Yum! 
  • RICE BOWL: We love shredded jerk chicken served over a warm bed of Basmati rice.  Add a bit of extra sauce, more pineapple chunks and topped with cilantro.  
  • WHOLE CHICKEN BREASTS WITH A SIDE DISH: Perhaps you don’t want to break the chicken up at all? No problem!  Keep the chicken whole and serve with a side of veggies.  Delish!

INGREDIENTS FOR INSTANT POT JERK CHICKEN: 

  • 4 large skinless chicken breasts 
  • 2 cups chicken broth
  • 1 (12 ounce) jar jerk chicken marinade (I used Lawrys Caribbean Jerk Marinade
  • 1 (20 ounce) can pineapple chunks, with juice
  • 1 (20 ounce) jar Caribbean Jerk Sauce  
  • Serve with rice, on tacos, sliders and so much more!

HOW TO MAKE JERK CHICKEN:

  1. Place chicken breasts and jerk chicken marinade into a refrigerator safe container and allow chicken to marinade for at least 30 minutes.  I prefer to marinade overnight for added flavor.  
  2. Once the chicken is fully marinaded, place chicken breast and all marinade juice and  from your container into your Instant Pot along with chicken broth and pineapple chunks with juice.
  3. Turn your Instant Pot on and select the ‘Pressure Cook’ function on high.  Cook for 5 minutes.  
  4. Once the timer beeps, all the pressure to naturally release for 15 minutes then quick release all remaining pressure.  
  5. Remove chicken from the Instant Pot and place in a large bowl.  
  6. With two forks, pull the chicken apart until shredded.  You should find the chicken in very tender and juicy allowing it to pull apart quickly and easily.  
  7. Before placing chicken back into the Instant Pot, drain 3/4 of the juice (leaving 1/4 remaining along with all pineapple chunks.  
  8. Add now shredded chicken back into the Instant Pot along with jerk chicken sauce.  Stir all ingredients until well combined.   
  9. Serve over a bed or rice, on a slider bun, on tacos and so much more!  Add your favorite toppings and enjoy!
